We’ve put together 10 budget-friendly meals that can feed at least four people for $25 or less. Prices will vary depending on where you shop, however each meal is built around affordable. This includes staples such as rice, pasta, beans, potatoes, ground meat and chicken.

The goal isn’t to sacrifice flavor or serve your family the same thing every night. It’s about being strategic with your grocery dollars. A pound of ground beef can become a hearty chili mac, chicken can be stretched with rice and vegetables, and beans and pasta can turn into a filling dinner for the whole household.

Cheesy Chicken & Rice Casserole

  • 2 lbs chicken thighs or breasts
  • 2 cups white rice
  • 1 can cream of chicken soup
  • 1 cup shredded cheese
  • 1 can mixed vegetables
  • 1 small onion
  • 2 cups chicken broth
  • Garlic powder, salt & pepper

Heavenly Chicken & Rice Casserole

Steps

  1. Cook the rice according to package directions using chicken broth instead of water.
  2. Cut chicken into bite-sized pieces and season with salt, pepper and garlic powder.
  3. Cook chicken and diced onion in a large skillet until the chicken is cooked through.
  4. Mix the rice, chicken, vegetables and cream of chicken soup together.
  5. Pour into a greased baking dish.
  6. Sprinkle cheese over the top.
  7. Bake at 375°F for 20–25 minutes, until bubbly and golden.

  • 1 lb ground beef
  • 1 box spaghetti

Steps

  1. Boil spaghetti
  2. Brown the ground beef with diced onion.
  3. Drain excess grease.

  • 2 cups rice
  • 1 can black beans
  • 1 can corn
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Salsa
  • 1 onion

Taco Bowls

Steps

  1. Cook the rice.
  2. Brown ground beef with diced onion.
  3. Drain the meat.
  4. Add taco seasoning and a little water.
  5. Heat the black beans and corn.
  6. Build bowls with rice, meat, beans and corn.

  • 4 large russet potatoes
  • Heavy cream

  1. Rinse the potatoes under cold running water.
  2. Preheat the oven to 400°F.
  3. Place the potatoes on a parchment-lined baking tray.
  4. Using a fork, carefully poke several holes through the skin of each potato.
  5. Coat the potatoes with olive oil and sprinkle with salt.
  6. Bake for 60–70 minutes, depending on the size of the potatoes.
  7. While the potatoes are baking, place the bacon on a parchment-lined baking tray.
  8. Bake the bacon at 400°F for approximately 15 minutes, or until crispy.
  9. Allow the bacon to cool, then chop it into small pieces.
  10. Once the potatoes are cooked, allow them to cool for about 5 minutes.
  11. Slice the top off each potato and carefully scoop the potato into a bowl, leaving the skins intact.
  12. Optional: Rice the potatoes for a smoother texture.
  13. Add the warm cream, butter, green onion, sour cream, bacon, cheese, salt and pepper.
  14. Mix everything together well with a spatula.
  15. Spoon the potato mixture back into the potato skins.
  16. Top with additional cheese.
  17. Bake at 400°F for another 15 minutes, or until the cheese is melted and bubbly.
  18. Remove from the oven and top with sour cream, bacon and green onions for garnish.

Chicken Alfredo Pasta

Ingredients

  • 1 lb chicken
  • 1 box fettuccine or penne
  • 1 jar Alfredo sauce
  • 1 cup frozen broccoli
  • 1 cup shredded Parmesan/mozzarella
  • 1 onion
  • Garlic powder, salt & pepper

Chicken Alfredo

Steps

  1. Boil pasta until tender.
  2. Cut chicken into small pieces.
  3. Season chicken with salt, pepper and garlic powder.
  4. Cook chicken with diced onion until fully cooked.

  7. Stir in cooked pasta.

  • 1 can tomato sauce
  • 1 small onion
  • 2 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tbsp mustard
  • 1 bag frozen French fries
  • Cheese (optional)

Steps

  1. Cook rice.
  2. Cut chicken into small pieces.
  3. Heat oil in a large skillet.

Chicken ‘n Dumplings

Steps

  1. Season chicken and place it in a large pot with chicken broth.
  2. Add diced onion.
  3. Simmer until chicken is completely cooked.
  4. Remove chicken and shred it.
  5. Return chicken to the pot.
  6. Add cream of chicken soup and frozen vegetables.
  7. Stir well and simmer for 10 minutes.
  8. Cut biscuits into small pieces.
  9. Drop biscuit pieces into the simmering mixture.
  10. Cover and cook for about 10–15 minutes, until the dumplings are cooked through.
