In 2016, Chris and Nicole leased a kitchen space to cook meals for their nonprofit children’s feeding program. The landlord presented them with an ultimatum: if they wished to continue using the space, they needed to transform it into a restaurant or event center open to the public. This ultimatum paved the way for the birth of Southside Steak & Cakes- The Cheesesteak Trap. In 2021, Steak & Cakes expanded as a concessionaire at the State Fair of Texas.
